This recipe originated on my favorite gluten free site Ginger Lemon Girl. This recipe evolved because I wanted to use my own flour mix. Anything can be mixed into the batter for more flavor - chopped walnuts, chocolate or butterscotch chips, or 1/4 cup peanut butter. This is a pretty fail proof recipe, so have no will enjoy! 3/4 cup Gluten Free Flour Mix
1 cup evaporated can juice
1/3 cup cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking powder
2 eggs, slightly beaten
1 teaspoon vanilla
3 tablespoons oil
1/4 cup water

Preheat oven to 350 degrees. Grease the bottom only of an 8x8 baking dish with butter. In a medium bowl whisk together all dry ingredients. Make a well in the middle of dry ingredients, add wet ingredients to well. Stir together until well mixed. Pour batter into greased baking dish. Bake 15-20 minutes. Sorry, toothpick test does not work well with the recipe; brownies should be slightly "springy"to the touch when done.
