Chicken Salad

I was really craving chicken salad, but wanted to disuse the sugary mayonnaise formally used in my recipes. After a quick Internet search for "chicken salad without mayonnaise" and a search through available ingredients in my pantry and fridge, I came up with this combination. The agave nectar was added to make the dressing solidify. The result was a very tasty salad that can be eaten plain, on gluten free pita bread, or over a green leaf salad. Either way - my craving was appeased!

Salad ingredients:
3 cups cooked chicken breast, chopped in bite size pieces
1 cup red seedless grapes, halved
1 large apple, peeled and chopped
1/2 cup chopped green onions
salt and pepper to taste

Dressing ingredients:
4 tablespoons olive oil
1 teaspoon apple cider vinegar
1 tablespoon stone ground mustard
2 tablespoons sour cream
1/2 teaspoon paprika
1 teaspoon agave nectar

Place dressing ingredients in bowl and mix with a whisk until smooth. Pour over salad ingredients in separate large bowl and mix gently. Serve chilled.
