Caramelized Onion Mashed Potatoes

This potato dish offers a twist to original mashed potatoes. The caramelized onions gave the potatoes a sweetness and the garlic gave it a little kick. For our one large Sunday meal, I made these potatoes with some grilled rib eye steaks today (again, my husband is the "Grill King") and that one meal will definitely carry us through another busy Sunday.

Start with:
1 pound unpeeled golden or russet potatoes, cut into cubes, then boiled until soft, drained and mashed, but left slightly lumpy

1 cup coarsely chopped onion
1 teaspoon olive oil
1/2 cup 2% milk (add a little more if you want a smoother texture)
1 tablespoon butter
1 teaspoon dried parsley flakes
1/4 teaspoon garlic powder
salt & pepper to taste

In skillet, saute onion in olive oil until onion is tender and deep golden brown, set aside. Add milk and butter to skillet and warm just until butter is melted and milk is warm, do not boil. Add onions, warm milk and butter, parsley flakes, and garlic powder to potatoes and stir until mixed. Season with salt and pepper.
