Bruschetta

2 cups tomatoes, seeded and diced
1 clove garlic, minced
½ cup diced red onion
½ cup finely chopped fresh basil
1 tablespoon Parmesan cheese
olive oil

Combine tomatoes, garlic, onion, basil and cheese in bowl. Drizzle oil over all until mixture is wet and mix gently. Chill for 2 hours. Serve with garlic bread, pita chips, or as a delicious topping for cheese pizza.
